Sugarplum Carrot Cake

 

If you ask any of my friends to name one vegetable I simply won’t eat, chances are they’ll say carrots. I don’t know what it is about them, the color, texture or taste when eaten raw, I just can’t seem to get over this childhood aversion.

However, when it comes to carrot cake, all bets are off. I’ve had a long-standing love affair with this dessert for as long as I can remember. I simply adore it, with or without frosting, single layer, triple layer, you name it, I’ll eat it. I have very fond memories of watching my grandmother prepare the best carrot cake in a 1960’s era kitchen. No modern appliances there. Moist, light, not overly sweet with a hint of cinnamon.

In the last twenty years, I can’t recall ever coming across a carrot cake as good as hers, and trust me, I’ve had my go at more than a few. I recently read an article somewhere mentioning Sugarplum Cake Shop as having the best carrot cake in Paris. I couldn’t possibly pass up a chance at finding a carrot cake as good as my grandmother’s.

Well let me tell you, it’s quite truthfully the closest I’ve come. It’s only taken twenty years and a couple of extra pounds on the scale but definitely worth the wait.

My grandmother is no longer with us and I’ve never been able to perfectly replicate her recipe. Now I don’t have to anymore, I can simply drop by Sugarplum, enjoy a slice and think back to sweeter times, standing in her kitchen spending an entire afternoon baking.
